My boyfriend and I bought a rotisserie chicken for dinner one night and used the leftover bones and meat to make a soup the next day.

We made the chicken broth first.  Pick out the leftover meat and put aside.

Boil a pot of water with:

-chicken bones and skin

-quartered onions

-chopped celery

-sliced carrots

-parsley

-salt and pepper

Leave to simmer for 4 hours, then strain the broth from the pot and throw away the vegetables and bones.

For the soup:

-sautée celery and onions in the pot

-add the broth to the pot

-add leftover chicken

-add parsley
